  • 10 oz defrosted spinach
  • 4 large eggs
  • 16 oz cottage cheese
  • 1 cup Cheddar cheese, grated
  • ½ cup red onion, cut into rings
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
