These cauliflower fritters are a delicious, easy-to-make alternative to potato pancakes also known as latkes, perfect for low-carb keto diets.

We’ve kept these Cauliflower Fritters simple and very easy to throw together, much like our other cauliflower recipes.

The recipe makes 6 small cauliflower fritters, which is equal to 3 servings and gives 2 pancakes per serve – topped with 1 tablespoon of Sour Cream. They’re also great topped with Aioli. 1 serving has 2g net carbs.

Keto Cauliflower Fritters Ingredients

  • ½ head of Cauliflower
  • ½ cup of Scallions, thinly sliced
  • 1 tablespoon of Golden Flaxseed Meal
  • 2 Eggs
  • 1 ½ teaspoon of Salt
  • ½ teaspoon of Pepper
  • 3 tablespoons of Butter
  • 3 tablespoons of Sour Cream, to serve

How to Make Keto Cauliflower Fritters

  1. Grate the cauliflower and place it into a mixing bowl, add 1 teaspoon of salt and mix well. Set aside for 20 minutes.
  2. Spoon the cauliflower into a piece of muslin cloth, or into a clean cotton cloth. Squeeze out as much liquid as you can.
  3. Place the squeezed cauliflower into a clean mixing bowland add the remaining ingredients, except the butter and sour cream. Mix well.
  4. In a large non-stick frying pan, add the butter and heat over medium to high heat.
  5. When hot, add spoonfuls of the cauliflower mix and flatten out into small pancakes. Fry on each side for 2-3 minutes until golden brown and cooked through.
  6. Serve with a tablespoon of Sour Cream.

How To Store Cauliflower Fritters

Store cauliflower fritters in the fridge for up to 4 days or freeze for up to 3 months. Reheat fritters in the microwave or in a frying pan over medium heat, until warmed through.

      We use raw cauliflower, the frozen cauliflower rice tends to be a bit too wet.
