These cauliflower fritters are a delicious, easy-to-make alternative to potato pancakes also known as latkes, perfect for low-carb keto diets.
We’ve kept these Cauliflower Fritters simple and very easy to throw together, much like our other cauliflower recipes.
The recipe makes 6 small cauliflower fritters, which is equal to 3 servings and gives 2 pancakes per serve – topped with 1 tablespoon of Sour Cream. They’re also great topped with Aioli. 1 serving has 2g net carbs.
Keto Cauliflower Fritters Ingredients
- ½ head of Cauliflower
- ½ cup of Scallions, thinly sliced
- 1 tablespoon of Golden Flaxseed Meal
- 2 Eggs
- 1 ½ teaspoon of Salt
- ½ teaspoon of Pepper
- 3 tablespoons of Butter
- 3 tablespoons of Sour Cream, to serve
How to Make Keto Cauliflower Fritters
- Grate the cauliflower and place it into a mixing bowl, add 1 teaspoon of salt and mix well. Set aside for 20 minutes.
- Spoon the cauliflower into a piece of muslin cloth, or into a clean cotton cloth. Squeeze out as much liquid as you can.
- Place the squeezed cauliflower into a clean mixing bowland add the remaining ingredients, except the butter and sour cream. Mix well.
- In a large non-stick frying pan, add the butter and heat over medium to high heat.
- When hot, add spoonfuls of the cauliflower mix and flatten out into small pancakes. Fry on each side for 2-3 minutes until golden brown and cooked through.
- Serve with a tablespoon of Sour Cream.

How To Store Cauliflower Fritters
Store cauliflower fritters in the fridge for up to 4 days or freeze for up to 3 months. Reheat fritters in the microwave or in a frying pan over medium heat, until warmed through.

We use raw cauliflower, the frozen cauliflower rice tends to be a bit too wet.
